Here's another Organic Meal we're excited to be trying this week!
This Coconut Chickpea Curry is ready in 30 minutes and serves 6-8 people.
Here's what you'll need:

What to buy at the Local Grocery Store or Mama Earth Organics Order:

4 cups Organic Chickpeas

½ cup Diced Organic White Onions

½ Chopped Organic Red Bell Peppers
-
2 cups Grace Coconut milk
-
2 tsp Organic Curry powder
-
2 tsp Fresh Chopped Organic Garlic

1 tsp Black pepper
-
½ tsp Garam masala
-
1 ½ tsp Organic Cumin
-
Sea salt to taste
-
1 tsp Organic Chili powder

1 Tbsp Organic Coconut Oil
INSTRUCTIONS
Sautee onions and peppers in a skillet on medium heat with 1 tbsp of oil. Once onions are translucent, toss in the chickpeas and stir until tender. Pour in can of full-fat coconut milk, switching to low-medium stirring for even coverage of the chickpeas (aim for a stew-like texture). Add the seasonings to taste and let simmer on low-heat for 5-10 mins. Serve with a side of organic basmati rice and enjoy!

Sautee onions and peppers in a skillet on medium heat with 1 tbsp of oil. Once onions are translucent, toss in the chickpeas and stir until tender. Pour in reusable jar of Mama's Coconut Masala switching to low-medium stirring for even coverage of the chickpeas (aim for a stew-like texture). Once chickpeas are covered, let simmer on low-heat for 5-10 mins. Serve with a side of organic basmati rice and enjoy!
